Oven "fries"

    Oven Fries by Eastcoaster (Manella)
    I've never made a recipe of Manella's that I didn't like and this was no exception. Crispy on the outside and creamy on the inside. I did made a few changes, I used avocado oil, smoked paprika and non-stick aluminum foil. They were ready in 30 minutes, probably because of the foil. I've made these in the past and I know that I will make them again, thanks Manella.

Looking at the recipe instructions, I find it interesting that the potatoes are soaked in water first, then coated in oil and baked. I'm thinking of the old adage of water and oil not mixing, but maybe the water draws out the starch to help them crisp??

    I'm not sure if it's the salt or the sugar that pulls the starch out of the potatoes but I would guess the sugar. There was a great deal of starch at the bottom of the bowl after soaking the potatoes. I think that the foil also helped to crisp them up.

    I made some fries like this a couple years ago. If I remember correctly the sugar does the same as if soaked in saltwater-- to draw out the starch. But it also aids in browning the potatoes so they crisp up better?--I think!
    They look so good Bren, I could go for a plate of those fries right now! yum! ;)
