    Pickled Egg Recipes

    Pickled Egg recipe made for IMI2 April Egg challenge.
    My review: Pickled Eggs as I remember how my mother made them.
    I made the RED beet EGGS version. I took a jar (15oz) of sliced beets and dumped the entire contents into a bigger jar and added everything else. Picture is of a sliced egg on day 3. The longer the eggs pickle, the more "pickled" they become.
    Pickled eggs are an "acquired taste" but one I've come to enjoy.

    I should have cooked my eggs another 2 minutes too as the yolks were a tad under cooked.

    I remember my parents having a huge jar of them on the counter of our deli/sandwich shop when I was little and it never appealed to me, lol....I can't recall if I ever tried one of them? So I probably assumed I wouldn't like them! Maybe one day I'll try one! :)

    I hated them for such a long time and was envious that everyone else in my family (when growing up) loved them. I felt like I was missing something and overtime learned to like them. An acquired taste for sure.

    Make a small batch Michelle. The recipe I used is very plain so not a lot of interesting flavors which is why next time I want to try one with spices and sugar.
