Pulled Bbq Pork

Littlesponger has some great recipes, I've tried many, and this one is no exception! I adapted this to the slow cooker. I used 3/4 cup of water and did not see when to add the balsamic, so I just poured it over the roast before putting the lid on. After 9 hours I pulled the roast out, shredded it, dumped all but about 1/2 cup of liquid out of the slow cooker, then added the meat back in and mixed it all up with the BBQ sauce. Left it in on the "warm" setting for about another hour. Served these up on buns for the family but I had mine in a sweet potato. Loaded it up with a little butter, cheese, jalapeno and pickled onion. We have plenty left for the busy weekend ahead :) Good stuff!

That looks great Michelle! I love the sweet potato, I don't think I've had pulled pork with potatoes before. Sounds like a great recipe! :)

Thanks everyone!! BBQ stuffed potatoes are very common here, but I don't ever see BBQ stuffed sweet potatoes, maybe I'll start a trend :P
