Pumpkin Apple Streusel Muffins

    Delicious muffin!! I love the combo of diced apples in this pumpkin muffin. The pumpkin pie spice is perfect in this without it being overpowering. And like most pumpkin baked goods, it tasted better the next day! Perfect for breakfast or packing for an on-the-go snack.
    With a few tweaks this is a 5 star recipe, I rated it 4 stars and here's why:
    This recipe has 1.25 times more sugar to flour, per gram. I couldn't imagine using that much! So I cut the sugar in half, to one cup. (I am sure cutting it down to 3/4 cups is fine too-- as the standard sugar to flour ratio in a fruit muffin is 1/2 cup sugar to 2 cups flour.)
    Because the batter was smaller (by reducing the sugar), I was able to use a 12 cup standard muffin tin. Otherwise, the recipe as written (with 2 cups sugar) plus streusel topping you would most likely need a 16-18 cup muffin tin.
    I opted not to use the streusel topping--as I was still worried about sweetness and I filled the muffin batter to the top of the pan! So I just sprinkled the top with oats instead. Without the streusel topping and the sugar cut in half- it was still plenty sweet for me!!
    The batter was quite thick, so I added a drop or two of water to get it mixed properly. Perhaps starting with 2 cups of flour would be best next time and work your way up if needed.
    And check on them at the 25-30 minute mark. Mine were cooked in 30 minutes.
    I would certainly make these again with the tweaks above!!

    Diz, I thought the apple would be overpowered by the pumpkin-- but it marries quite well and you get that apple pie type flavour with the spices. My kids prefer pumpkin muffins with chocolate chips though, lol, but I like this better! :)

    Linda, if I had some pumpkin seeds I would have made a nice seedy, oaty topping! I think that would be great with these. :)

    Michelle, a TON of sugar is right! I thought it was a mistake, but I found 2 other exact recipes on here, plus a bunch in google searches and they all called for 2 cups of sugar. Crazy. I really wanted a pumpkin apple muffin, and this is all that came up in the search that used fresh chopped apples. It certainly doesn't need all that sugar! :)
