Pumpkin Brownies

    *Made for the October 2018 Pumpkin/Halloween Recipe Challenge*

    Woohoo, these were awesome! The spices in this were perfect, they really give you that "Fall" feeling :) They did come out more cake like than brownie, but nobody complained lol. The kids said that I should add more chocolate chips next time, of course. I think that would take too much away from the pumpkin/spice flavor though, but what do I know :P I don't have an 11x7 pan so I just put it into an 8x8 and baked for a tad longer since they were thicker. Worked great!

    Lovely photo Michelle! I think I`d be disappointed though, if the recipe said it was a brownie but it had more of a cake consistency. Bet they taste yummy though.

    Maybe they were more cake like because they were thicker and baked longer? They remind me of a blondie recipe for sure, except with no butter.
    It still tasted great and that is all that matters! :D

    I don't think it was your fault Michelle! Now that I'm thinking more about it -- it seems that the lack of butter and lifting of the egg whites made it more cake like? I might have to try this and see how it turns out for me in a 7x11" pan. I think I have just enough pumpkin puree left! ;)

    I used an 7x11" glass cake pan, that I lightly greased. I didn't see a bake time on the instructions, so I set the timer for 25 minutes and it was done. So I'll check on them in 20 minutes next time. But they didn't seem overcooked or dry though.
    The batter seemed so thin in the pan, and I could see it fitting just fine in an 8 or 9" square pan like Michelle baked them in. I thought it would rise a lot more with the baking powder and egg whites, but it didn't rise too much. It's soft, yet chewy and moist. The spices are great too.
    Instead of beating all the ingredients together, I beat the eggs until frothy, then added the oil, sugar and pumpkin and whisked until combined. Then I folded in the dry ing.'s and chocolate chips. (as I didn't want to overwork the batter)
    I don't think my photo is far off yours Michelle, maybe a tad thinner. ( the brownie on top was the thickest one from the middle of my pan) So I don't think the pan size made much of a difference. I can see adding another Tablespoon of oil to make it denser like a brownie, however as-is it's still a great bar and very delicious!! :D

    I completely forgot to mention the bake time!!! I can't remember now how long I baked them, but I think it was somewhere between 25-30 mins. The texture of yours look extremely similar to mine :) I think I may have called these "cake like" because of how thick they were since I baked in a smaller pan. I'm so glad you ended up making these and confirming how delicious they are :) They are just the perfect Fall dessert!!! Beautiful picture Shona!

    I might try a little more cocoa powder next time and see how that works out! ;)
