Pumpkin Chili

    Pumpkin Chili by Diz3

    This is very hearty and delicious! Like Diz say's, you would never know there was pumpkin in it. But it sure makes for a creamy, rich chili that is very filling! I only ate half of what I would normally eat, so I think that's because of the pumpkin puree!
    I used pinto beans instead of kidney beans, as that is what I had on hand. And I used the canned equivalent's listed for the fresh tomatoes. I didn't add any water, just the liquid from the canned tomatoes and it turned out perfect for me (I simmered it with the lid on, so it did retain more moisture though).
    I didn't use any salt because the canned goods' had salt; it was perfectly seasoned with the amounts listed and just spicy enough for me with the green chilies. :)
    Even the kids ate it and liked it, super bonus!!
    I will definitely make this again! Try it, you won't be disappointed :)

    Great photo, Cosmicmom! I've had this in my bookmarks for a while. It's close enough to my recipe (I don't use chilies or peppers, though) that I know it had to be good. The addiiton of pumpkin sounds like it made this filling. Built-in portion control - haha! Thanks for the info, Cosmicmom. Now I can't wait to try adding a little pumpkin to my recipe.

I have so much pumpkin in the freezer that this is the only way I make chili now. Great photo! Good idea to eat with chips and sour cream! YUM!

    When I was making it, the kids were saying "Not chili, we don't like chili!" It's because I usually make a turkey chili with zucchini and chick peas etc...So they much preferred this one and said it tasted like taco's with the tortilla chips! Winner :)

    I'm going to make my very similar tried and true chili recipe tomorrow and add 1/2 C. pumpkin. I'm afraid to add a whole cup, so will start small. Can't wait to try it!

    The pumpkin is undetectable and the chili just tastes like...well...chili! I did notice that the pumpkin made it thicker, but that's not a problem for us. We like thick soups, stews, and chili that you practically need a fork to eat! Since it's so close to mine, I'm tempted to rate DIZ's recipe, but there are a few differences. Mine doesn't use green pepper or chilies, but does include brown sugar and vinegar. Everything else is the same except mine makes half as much. Thoughts anyone???

    It's a well flavored chili. I think the pumpkin flavor is covered up with the cumin and chili powders.
    I halved the chili powder amount so I could feed it to someone who still has tonsils.
    The pumpkin puree acts like a thickener which is OK by me. I even added an extra cup of the puree, which was a combination of pumpkin, butternut squash, apples, potatoes and maple syrup.
