Pumpkin Gnocchi

    Pumpkin Gnocchi by Eastcoaster

    I finally made this!!! It's been on my to-do list for years! Gnocchi is one of my all time favorite comfort foods. But I've never had or made pumpkin gnocchi before, and this was absolutely delicious!
    I made this as a quick week-day dinner before we had to go out to a High-school awards ceremony. So you'll have to forgive my misshapen gnocchi's, Lol!
    It was so quick and easy to prepare, especially since I used prepared pumpkin puree. I used two cups of puree, and about 2 cups of flour (like instructed I just kept adding more to bring the dough together).
    I started off with ropes of really soft dough that I couldn't press on the tines of a fork, so I added more flour as I went on, hence the different sizes. But the great thing about gnocchi is, whether your dough is thicker or larger they tell you when they're done when they float to the top! It was so fun to make, and like I said---quick and easy!
    I used the last bit of cream I had (finally!) in the parmesan sauce, and added some lemon zest, garlic, pepper and nutmeg.
    Everyone in the house devoured them and loved it so much!! It served just enough for the 4 of us with a garden salad on the side.
    I can't wait to make this again, thanks Manella!!

How apparent was the pumpkin flavor? wondering if it would go well with a tomato based sauce or if it's best with crème or butter based? I see people using gnocchi now in stews instead of potatoes, I bet that would be fantastic! or in soups to replace noodles.

    I couldn't tell it was made with pumpkin with the cream sauce I made. Which for me was a good thing because I was worried it would taste too sweet or earthy. But it was neutral tasting (next time I'll try a naked gnocchi before tossing it in a sauce! ;). You usually see pumpkin gnocchi in a butter-sage sauce, perhaps the sage brings out the pumpkin more?
    I think a light tomato sauce would be great. I'd also like to try a pesto sauce next time. :)
    Maybe Manella has some different sauce ideas!

    I was worried the kids wouldn't try it because the dough was orange so I made them try one before plating, and there was oooh's and ahhh's! They helped me in the kitchen too, one with the sauce and the other with the dough. (Which is why some gnocchi's look squished, lol ;) I like to get the kids in the kitchen as much as possible, I find since doing that they always try new things and they have really opened up to new flavors and offer ideas! Maybe I have one or two chef's in the making ;)

    Shona, the gnocchi look pretty good to me. If you make them again try the side of a box grater rather then a fork.I find it easier that way:)))

    Those look incredible, Cosmicmother! I love gnocchi! I've always wanted to try pumpkin gnocchi, but never knew what kind of sauce to use. This gives me some ideas! We eat at an Italian restaurant that makes homemade gnocchi. They don't even bother shaping it. Cut and boiled.

    Thanks Diz! I use to work in an Italian restaurant and that's how they made their gnocchi too, they looked like little pillows! We would freeze them on sheets then put them in bags for individual portions. The customer got to choose their pasta and sauce. I would always have potato gnocchi with creamy pesto sauce!
    The lines do hold the sauce better though, especially slippery butter sauces, but thick sauces are ok. Either way, the gnocchi and the sauce will get in my mouth somehow, LOL ;) ;)

    I love how you wanted a quick dinner, and decided to make homemade gnocchi :P After reading the directions though, it sounds super easy!! Too cool you got your kids involved in making these, of course they will want to try their labor of love :) It's handy that you can freeze these, I'd make a big batch and freeze in portions to have ready on a busy night :)
