Pumpkin Pie Bars

    First off I halved this recipe with great success, and also used almonds instead of pecans cause that's what I had. I was really worried because the filling was very soupy and when I sprinkled on the rest of the crumb mixture it almost looked like it was going to sink in, but it didn't. It also baked up really nice and firm, which I was surprised about, just by the "soupy-ness" of it. Tasted fantastic too, not jaw clenching sweet, just right, and they were gobbled up, and I was wondering why I didn't just make the whole darn recipe lol :) Delicious!!

    Oh wow, that's a different sounding recipe! Like Bakerme said it sounds like a pumpkin cheesecake. The crust sounds great too, I'm not a fan of graham crusts and this sounds like a good alternative!

    No surprisingly it did not have the cheesecake texture, I don't think it was enough cream cheese to do that though. Going to rate it right now, I just thought of it and was hoping that nobody caught me yet :P
