Pumpkin Spice Blondies

    Made for the October 2017 Pumpkin Challenge!
    Pumpkin Spice Blondies by Hmtraves
    I have a lot to say about this recipe, so bear with me.......

    I didn't have high hopes for this upon looking at the recipe. But I thought I'd try it and see if it would surprise me. Well, I wasn't surprised. Because of the very little flour it set up more like a pie filling or soggy-spongy cake. I baked it for an extra ten minutes just to make sure it baked all the way through.
    I would call it a Pumpkin Pie Bar instead of a Blondie! To make it more cake like or cookie like it needs more flour, I'd opt for 2 cups of flour (which I may try again and will update if I do)
    If you love pumpkin pie than you'd probably like it! I don't like the texture of pumpkin pie so I would not make it as written again.
    The white chocolate chips lend nothing to this. The flavour is completely lost and just adds extra sweetness which it does not need. It needs a contrast, either in flavor like adding semi-sweet chips or in texture, like walnuts or pecans for that crunch. I think I would certainly like this better with semi-sweet chocolate chips, and if I do make it again with the extra flour I will try it.
    I gave this 3 stars but my kids went back for more, so perhaps it deserves 3.5 stars.

    Yeah, and there's no crust to it either so you're just eating the filling, lol ;)

    I wondered if she said 1/1/4 cups of flour by mistake and meant 2 1/4? Oh well, the kids will eat it so it's not a total waste, lol ;)

    Your photo is beautiful Cosmicmom, even if you didn't like the end result of the recipe. I'm not a white chocolate fan, finding it way too sweet for my taste, and agree semisweet chocolate chips go better with pumpkin.

    My DH liked them and took them to work this morning as the guys will eat anything! He liked them too, so I guess it's just me with the "texture" thing.

    *They firmed up more in the fridge overnight, so if anyone stumbles across this and makes the recipe as written, loosely cover and store in the fridge (once it's cooled to room temp.)

    I looked at that recipe too Bakerme! :) I searched some others online and most recipes had a little more flour and butter. I will have to try it that way soon. Trying this recipe with less pumpkin is a good idea too!

    Michelle, the firmed ones in the fridge turned out great. My son and husband told me last night they loved them! So I guess I am just the odd one out! Lol ;)
    They set up like a fudgy brownie, but since it was pumpkin it felt odd to me. The taste was great though, just texture wise not for me. I think I'd prefer it more cookie like.
