Raspberry White Chocolate Muffins

    Raspberry White Chocolate Muffins by Keni

    I was searching and searching for recipes with cranberries and lemon as I had some frozen cranberries leftover from Christmas. At first, I looked at scone recipes and came across one with white chocolate chips--I also had a few white chocolate chips leftover so I thought that was a great idea too--but it used dried cranberries. So I was determined to find a recipe with fresh/frozen cranberries, lemon and white chocolate chips. This recipe came up in an ingredient search because Keni lists you can make these with blueberries or cranberries.
    On the initial look of this recipe, the only thing I knew I would change was the leaveners. Instead of 2-1/2 tsp. of baking powder I used 2 tsp baking powder and 1/2 tsp. baking soda, because of the acidity of the lemon juice mixed with milk to make buttermilk. You need to have baking soda in it to help it rise or leaven and give an open airy structure. (In Keni's photo the muffins look a little flat, mine are just slightly more domed with the soda). I'm sure it would be fine as is, just more dense with a close structured crumb.
    For the "buttermilk" I added the juice of a lemon to a one-cup measure first and topped with milk--instead of adding a whole cup of milk plus the juiced lemon. I thought I would add more milk if needed; but it didn't need any more liquid, the one cup was perfect.
    I didn't quite have a whole cup of white chocolate chips, I had about a half cup, but it was soooo delicious anyways!! Because this was Valentine's Day dessert I topped it with a raspberry glaze (powdered sugar, raspberry jam and lemon juice) instead of the streusel topping. I think the extra sweetness helped because of the tart cranberries.
    Raspberries are my favorite fruit and I can't wait to make these again with the raspberries and oat topping!
