Ingredients

How to make it

  • Add juice from the lemon to milk and set aside. (this is making your own buttermilk)
  • Toss berries with just enough flour or baking mix to coat. Set aside
  • Mix butter and sugar until smooth
  • Add zest from 1 lemon and vanilla
  • Add eggs, one at a time, and mix until combined
  • Add flour, baking powder and salt alternating with buttermilk and stir until just combined
  • Carefully fold in berries and chips
  • Fill 12-15 regular muffin cups or 8 jumbo cups about 3/4 full
  • Top each with topping mixture
  • Bake at 375 for 20-25 minutes until toothpick comes out clean

    I used frozen cranberries this time and can't wait to make this again with fresh raspberries! I made this for Valentine's Day dessert so to make it more decadent I drizzled with a raspberry glaze instead of the streusel topping. It was delish!

    These muffins look & sound wonderful. I love raspberries & I have some frozen from last summer. Do you think frozen would work for this recipe cause I CAN'T WAIT for next summer to try them.I didn't mix suger in them when I froze them 5555++++ & flagged as beautiful.
