Raspberry White Chocolate Muffins

- 1 stick butter, melted, but cool shopping list
- 3/4 cup sugar shopping list
- 1 lemon(will use zest and juice) shopping list
- 2 eggs shopping list
- 1 cup milk shopping list
- 1 1/2t vanilla shopping list
- 2 cups flour shopping list
- 2 1/2t baking powder shopping list
- 1/4t salt shopping list
- 1-1 1/2 cups fresh raspberries(cut if needed, depending on size)* shopping list
- 1 cup white chocolate chips shopping list
- (extra flour or baking mix to coat berries to help keep them from sinking in the batter :) shopping list
- TOPPING: shopping list
- 1/2 stick butter, softened shopping list
- 1/4 cup white sugar shopping list
- 1/2 cup oats shopping list
- 1t nutmeg shopping list
- 1/4-1/2 cup flour(as needed for crumbly texture) shopping list
- Combine all ingredients with fingers or fork until crumbly shopping list
- *blueberries can be subbed, as can dried of either...or dried cranberries :) shopping list
How to make it
- Add juice from the lemon to milk and set aside. (this is making your own buttermilk)
- Toss berries with just enough flour or baking mix to coat. Set aside
- Mix butter and sugar until smooth
- Add zest from 1 lemon and vanilla
- Add eggs, one at a time, and mix until combined
- Add flour, baking powder and salt alternating with buttermilk and stir until just combined
- Carefully fold in berries and chips
- Fill 12-15 regular muffin cups or 8 jumbo cups about 3/4 full
- Top each with topping mixture
- Bake at 375 for 20-25 minutes until toothpick comes out clean

These muffins look & sound wonderful. I love raspberries & I have some frozen from last summer. Do you think frozen would work for this recipe cause I CAN'T WAIT for next summer to try them.I didn't mix suger in them when I froze them 5555++++ & flag...more
