Real Almond Cookies

    *Made for the December 2020 'Holiday/Festive' Recipe Challenge*

    These are pretty amazing! I absolutely loved them! They are soft and crumbly but in a good way, and slightly sweet which is what I was looking for. I used chopped pecans since the directions said I had to choose between those or raisins because using both would make it too crumbly. Does that make sense to anyone? I would have loved to use both, but didn't want to ruin the recipe. I did use almond extract instead of vanilla because I LOVE the stuff and thought it was a good place to use it :) Easy to make and delicious!!!

    I can see how the dough would make it hard to incorporate both raisins and pecans. Perhaps if you double the dough and use a 1/4 cup each of raisins and pecans, it work out better. Yum, good call on almond extract! :)

    Great photo Michelle. I've only worked with almond flour once and it was for a quick bread. It's tricky because it doesn't stick together like standard flour does. I too would opt for the pecans.
