Red Beans And Rice

    *Made for the January 2020 "Beans and Legumes" Recipe Challenge*

    Pretty straight forward red beans and rice recipe! This was a first for me I think with celery in beans though? I used smoked sausage and pre soaked beans, took about 3-4 hours to get tender. Family loved!
    I wasn't able to get a picture as the family ate them without me the first night while I went to dinner with a friend and we quickly inhaled the leftovers the next night.

The combination of celery, onions, and bell peppers is called "trinity" and is used in Cajun cooking. This is pretty much how I make red beans and rice except I mash half of the beans with a wooden spoon or a potato masher so its thick and soupy. Then I ladle it over the rice. I should make this for my hubby on Mardi Gras. This is one of this favorite Cajun dishes.

    I very rarely don't get a picture Shona but lately I am a hot mess and need 40 hours in a day instead of 24 lol. My house is going on the market in 2 days and building a house as well, so all my time goes to cleaning and running around picking out things, it's craziness!!!

    I'm really sorry if I've been slacking the past couple months, mainly with responding to posts quick and making the amount of recipes I'd like to make. I'll get back with it full force by March for sure, in my new kitchen :-D. My family will appreciate it too lol.

    Mommyluvs2cook--Congratulations on your upcoming new home. That must be so exciting. I can understand your stress. So many things to do, decisions that have to be made, etc. Getting a house ready to put on the market is more work than most people realize. It will be worth it when all is said and done.
