Red Beans And Rice

- 1 lb Camilla Brand red beans these beans come from louisana if you can find them..if not use any dry red beans. shopping list
- 1 lb smoked/kielbasa sausage, sliced i like lots of it!! shopping list
- 7 cups of water (to be added after beans have been soaked) shopping list
- 4 stalks of celery chopped shopping list
- 1 medium onion, chopped shopping list
- 1 bell pepper chopped shopping list
- 2-3 pieces chopped garlic shopping list
- 1 large bay leaf shopping list
- Season to taste salt (sea salt) and some pepper shopping list
- heck you can put a little Old Bay Seasoning if you like or Tony Cachere's shopping list
How to make it
- Take your dry beans rinse and sort
- now listen: its best if you can let them soak overnight in about 6 cups of water and pour off water, if time is a problem then after you have rinsed and sorted bean put in at least a 8 qt. pan and bring to a boil, turn the heat off, place iid on and let set for at least an hour.
- if you have soaked them overnight, then pour off the soak water and add about 7 cups of water and start beans cooking very low..
- while the beans are starting to cook, take you smoked sausage, onion, celery and bell pepper with very little oil and saute until the onions are tranlucent and add all to your cooking beans.
- let all this cook until the beans are done but firm
- now after about the beans has cooked an hour or so make you rice.
- here is the proper and best way to cook rice.
- 1. always use medium grain rice.
- 2. use two parts water to 1 part rice (2 cups water 1 cup uncooked rice.
- 3. bring water to a boil and add rice, bring back to boil stirring rice constantly.
- 4. once boiling turn heat down to low and place air tight lid on your pan.
- 5. set timer for 17 mins. do not lift lid!! when 17 mins are up remove pan from eye and let set DO NOT LIFT LID!!
- 6. wait at least 4 or five minutes. rice is perfect.
- fix bowls of rice and put your red beans over it.
- EAT IT!!!
- Serve with garlic bread, cornbread, toast, cheese toast, crackers, white bread, wheat bread, no bread just eat it!!!
- i like to add a little lousiana hot sauce to mine for that little kick, tobasco sauce is a little hot for my stomach..but a few drops with make it really good!! Tony Cachere's Seasoning is also great. In other words bump it up to your own taste and stomach!!!
- NOW GET COOKING!!! GET EATING!!
