Red Chili

    ~Made for Feb. 2020's "Red" Recipe Challenge~

    This is a great Chili, simple and easy!
    For the beans she calls for one 15.5oz can of chili beans and another 15.5oz can of your choice-- red kidney, black or pinto. I only had two cans of beans in the cupboard, 19oz's each of pinto and black beans. I've seen other recipes call for chili beans but I've never seen them here--a quick Google search says they're usually pinto beans with a bit of chili seasoning/sauce in them? So I just added a can of mild green chilies to the mix and left out the red chili flakes and cayenne pepper-- since my daughter is very sensitive to it anyways!
    With the onions, garlic and chili powder called for with the green chilies I added- the flavour was great! I thought it might need more seasonings like cumin, cilantro or oregano etc.. but it was great as-is. Since I used the larger cans of beans I added about a cup of water--I was also slightly short on the canned tomatoes (about 3oz) and 2oz short on the tomato sauce. The consistency was perfect for me with the added cup of water. The photo below was the first bowl scooped and is much thinner than how it turned out in the end--which was fork-worthy chili!
    The family absolutely loved it! :)

    Beautiful bowl of chili! I too have never had chili beans but I've seen them on the shelves of grocery stores. One of these days I'll have to buy a can and see if they are all that. Not sure if they would work for me because I like to drain and rinse beans but then again I don't drain or rinse baked beans. Looks like an ideal recipe that keeps it simple.

    I always drain and rinse beans too, even when the recipe says not too! Lol...;)

    This time I used navy beans and black beans, I love that bean combo! And decided to add some veggies to it, some chopped celery, red pepper and yellow pepper (about a 1/4 cup each). And added a little more spice along with the chili powder: some cumin, oregano and coriander. Last time I didn't use the red pepper flake or cayenne but I did add a little red pepper flake while sautéing the veg. (last time I used a can of green chili's, this time I didn't so I used the extra spice and red chili flakes)
    I left the canned tomato products the same, I think the amounts are perfect as well as the amount of beef and beans-- and that is why I wanted to make this recipe again. My family loved it!! I mean really LOVED it! Even my daughter who isn't a big fan of chili said it was the best ever and actually had a second bowl! A winner recipe that I will make over and over! :D
