Red Italian Wedding Soup

    Red Italian Wedding Soup by Gabysegalla

    This was ok. The herbs and spices were good, but it lacked a tomato-y/acidic flavour which made it fall flat (no depth of flavour). I did add some balsamic vinegar at the end which helped. I think a can of diced or stewed tomatoes would have been better than tomato sauce.
    I was feeling rebellious and also added a carrot, and a small handful of spinach along with the peas. I couldn't follow the directions listed, it seemed so wrong not to sauté the aromatics, spices and dried herbs etc..so I sautéed everything before adding to the pot of liquid. I left out the peas until the last 5 minutes because 30 minutes is way too long to cook peas. I rolled the sausage into little meatballs before sautéing them, and added them in the last 15 minutes of cooking along with the cannellini beans.
    The soup was barely red so I doubled the tomato sauce in the end. It was one of those recipes where I knew the method was wrong but thought the flavours would win--but it just didn't hit the mark for me. It was still edible, but I would have to change a lot of the recipe in order to make this one again.

I was thinking it's like a Tuscan Bean Stew with pasta?Yes....nothing ventured nothing gained is exactly what I was thinking too! At least I have a "garbage man" around the house that will eat just about anything I make... Lol ...he never let's any food go to waste! ;)

    Personally i would have used a can of diced tomatoes also and some rosemary.

    Darn, too bad this was just ok for you. I agree, sounds like a can of tomatoes would have done the trick and I would have made meatballs too, which I thought were a must in Italian Wedding soup? Great picture though Shona!!
