Risi E Bisi

    I made Manella's
Risi E Bisi, A Quick And Simple Souprice And Pea Soup
for the January IMI11 Challenge. It's a really nice comfort food soup and would be great to give someone who was feeling a little under the weather.

The pancetta I bought at the grocery store was fairly thick and cut into small cubes. I just eyeballed how much to throw in. I used 4 1/2 cups of my home made chicken broth but did end up adding another 3 cups later on as the rice does really absorb the broth and even though Manella had said that for a true 'risi bisi' the liquid should have reduced enough to have almost a glutinous consistency to it, I prefer soups soupier, with a goodly amount of broth. The recipe says it serves 3 but you'd have to have really hearty appetites. :) I used frozen peas although I'd love to try this when fresh peas were available out of the garden. I did add the optional minced garlic as both hubby and I love garlic.

This turned out really nicely and I'm going to bring some over to a friend later this week to share. Thanks for a new soup recipe Manella. :)

Chuckieb, I love your photo, it looks delicious.I do agree with you about liking a soupier soup as I do,also. This is the way my mom made it and of course we do change things along the way😀😀You are so right about it being a comfort soup, it is my go to when I’m not feeling good, but then I just like soup.Thank you very much for making it and hope you liked it. I appreciate it a lot. Very nice of you to bring some to your friend.
Thank you for the wonderful review:)))

Yum, looks delicious!!! I like a good amount of liquid in my soups as well, so I'd add more broth too :) I love peas and haven't had pancetta in FOREVER, bookmarking this to try!!! Beautiful bowl of soup Janet!

Chuckieb, i went and added that you could keep extra hot broth on the stove in case it gets too thick. This is what it is all about, ideas!!!
Thank you for your input much appreciated:)))))

Mommyluvs2cook, if you make it i hope you like it:)

Thanks everybody! I'm glad you like my photo Manella, because since you didn't have one uploaded, it automatically uploaded mine to the prime position (if you do upload one in the future you can over-ride mine jus' sayin'). I always feel bad when that happens. :) We had more of your soup for lunch and it was SO nice. Do try it Michelle and Shona. It's a lovely recipe.

Janet, you made me want to make this. I don’t know why I don’t make it more often as it is my favorite. I made it for lunch today and added a photo this time. Thank you for the nudge😀😀😀
