Roasted Cauliflower Tomato Salad

    *Made for the February 2020 "Red" Recipe Challenge"

    I can't rave enough about how good this is!! I was looking through my recipe box for something on the healthy side to make for lunch so I typed in tomatoes and this popped up. So glad it did, amazing! The only thing I did not have was pine nuts, so I subbed toasting up some chopped walnuts. Lol, I ended up forgetting them for the picture though :-p

    I don't think there is any need to boil the cauliflower first to save time. I actually set my oven to 425 and roasted for about 18 mins. and they were perfectly cooked. So for my preference they would have been overcooked the other way.

    I usually like lime juice in my pico but glad I stuck with the lemon juice because it worked well with the cauliflower. Doubled up on the recipe and now I have lunch for tomorrow, yay!

    Looks wonderful Michelle. Love roasted Cauliflower, I agree there is no reason to boil it first. It roasts quickly as is. I think boiling first too would make it soggy.
