Roasted Garlic Onion and Red Pepper Dip

    Roasted Garlic Onion And Red Bell Pepper Dip by Vino4dino

    This is a "wow" dip! Exceptionally delicious with a gourmet feel, yet so quick and easy to make! The longest part of this recipe is roasting the garlic and onion, and charring the red pepper. Once that is done it's just a matter of putting the cream cheese, feta, olives, capers and vegetables in a food processor.
    I let it sit overnight, and in the morning I made 2 French baguettes to serve it for lunch. The directions say to broil baguette slices with olive oil and serve with the dip. However I also served it with crudité and crackers, all were delicious! We had a lot of dip leftover, so we also had some with potato chips and that was very good too! I can also see this with leftover turkey or chicken sandwiches, panini, wraps, pita etc..
    Since it makes a lot of dip, this would be perfect for company, and impressive too!

    I would absolutely love this dip!! I bet the roasted garlic gave it so much flavor. Just from the picture it looks like hummus :) bookmarking, my family would totally go for this at get together's! Great picture Shona!!

    Nice photos, Cosmicmother! This is something we would really like. A perfect combination of flavors. Mommyluvs2cook mentioned hummus. As I was looking through the recipe, I recently made hummus with a similar flavor pattern. It had everything this recipes has in it except the cream cheese and feta.

    It has the consistency of hummus! I could see this with pureed chickpeas instead of cream cheese, that would certainly make it healthier! :)
