Roasted Winter Vegetable Soup

    I used all but celery root and leeks,didn't have any so i added turnip.
    I cut back on the garlic even though we like garlic i thought 8 cloves would be overpowering.
    I used 3 large cloves, just right! I did not use wine,used chicken broth mixed with vegetable broth, I also added a can of Italian tomatoes for color.
    I really like parsnip in soups, i find it give it a lovely sweet/spicy flavor.
    I made the whole recipe, i like to freeze some for those days when you don't feel like cooking
    I put it in the slow cooker, and it worked very nicely.
    Great tasting and added a lovely aroma while cooking.
    We ate it with my home made multi grain bread YUM!!

    That sounds like a lovely vegetarian meal, especially on a cold winter day! Good idea to freeze some for another day. I do like celery root but turnip is a great substitute for it. Yum on the home made bread! :)
