    Rotisserie Style Chicken
Recipe made for IMI2's June 2019 'Fresh Herbs, Sauces, Dry Mixes or Rubs' recipe challenge.
The dry rub is excellent! I had been using another recipe that is similar but the measurements in this recipe are much better, not overwhelming with peppers and salt.

My review: Excellent blend of spices and herbs! The only thing I did different was cook mine in the crockpot. The skin doesn't get crispy but living in SW Florida it's a better cooking option for me especially this time of year. I rolled up balls of tin foil so the chicken rested atop of them and I cooked on low for 8 hours and the chicken was tender and moist and very delicious!

Great photo, LindaLMT! The chicken looks beautiful and perfectly golden brown. I would never have known that you cooked it in a crockpot. I've been looking for a good rotisserie style rub. Will have to check this one out.

Thanks DIZ. When the weather allows me to use the oven I spatchcock the chicken and use this rub.
