How to make it

  • Mix seasoning and cover chickens with it.
  • Place onions inside chickens.
  • Wrap with plastic wrap and place in freezer bags.
  • Put in fridge over night.
  • Preheat oven to 250 F.
  • Place chickens in roaster and bake, uncovered, for 4-5 hours, depending on size of chickens. I usually start to check around 3.5 hours just to be sure! Make sure internal temp is up to 180 F.
  • Let sit for 10 min before carving.

    Excellent blend of spices and herbs! The only thing I did different was cook mine in the crockpot. The skin doesn't get crispy but living in SW Florida it's a better cooking option for me especially this time of year. I rolled up balls of tin foil so the chicken rested atop of them and I cooked on low for 8 hours and the chicken was tender and moist and very delicious!

    What a great way to cook a whole chicken without the high heat splatter!! I put this in on my lunch hour and came home at 5:00 to a perfectly cooked, moist chicken. A bit more in IMI. 4/18/15
