    ****March 2019 Group Recipe Challenge--Green Foods***

    I made this for the “green” portion of the recipe challenge. It was just o.k. There are too many odd flavor combinations that do not pair well. The base is a super sweet caramelized onion with spinach. The sauce didn’t have any real flavor. A bit of a bitter bite from the vodka that was covered up with the taste of lime and peppercorns. Chives on top for strong chive taste. Salmon is salmon. Hubby and I instantly agreed that the sweet caramelized onions did not fit in with the other mix of flavors at all. It was dinner. We ate it. Not our cup of tea.

    Awww, darn, too bad it wasn't that great DIZ :( It sure is a beautiful photo though! It does kind of seem like odd flavors going together, and when I see I see vodka sauce, it usually has tomatoes in it, which it seems would cut the bitterness of the vodka.

    Thank you, Mommyluvs2cook! I like vodka rigatoni and it has tomatoes in it along with a lot of other seasonings. This was bland.

    Beautiful picture DIZ! and a lovely green one too. Bummer that the combination of it all wasn't all that. Maybe a mild white fish would work better but then again I would just sum it up as different strokes for different folks and find another.

    My MIL always makes parsley sauce with salmon, she bakes it on. It's a handful of parsley, green onions, a clove of garlic, lemon juice, butter--blitz that up spread it on salmon and bake. If you google "parsley sauce salmon" you'll see some recipes. Some cook the sauce separately and add some liquid, some add cream and capers. She made it on her last Summer visit with fresh salmon she brought from the West Coast- and we baked it on the grill in parchment-lined foil pouches. Everyone loves her parsley sauce! But, alas, I don't eat salmon so I cannot attest to that personally ;)

    Thank you, Cosmicmother! Your MIL's recipe sounds wonderful. Parsley and green onions would definitely be a better combo than chives and lime. I think cream and capers would be excellent addition. I will see what I can find.
