This is very easy to make. I added a splash of cream to the eggs for a fluffier egg. Instead of sticking the pan under the broiler to finish cooking, I put a lid over the skillet. Loved the vegetable combination. This was my first experience with Emmental cheese and it wasn’t a good one. I found the cheese to have a strong “spoiled” taste like sour milk. It even smelled bad cooking. Two bites and I’d had enough. I don’t think the cheese was bad. I got it from the deli and the lady opened a new block of cheese. I won't fault the recipe for something that is most likely an acquired taste. It would be good with a basic Swiss, Cheddar, Monterey Jack, or any one of your favorite cheeses.

Great picture DIZ even though you didn't like the cheese called for but kudos to you for trying it. I had to look up what Emmental cheese is because I never heard of it. Looks like a good recipe to use for a breakfast for dinner meal. I like the combo of mushrooms and spinach.

Thank you, LindaLMT! I looked up Emmental before I tried it. It tastes nothing like the descriptions. Maybe there was something wrong with the cheese. Who knows?

Picture looks awesome Diz, so sad the cheese ruined it for you :( I also looked up Emmantel cheese. It said it's a mild cheese which is weird since you said it's strong. I wonder if there is somehow it was spoiled?

Thank you, Mommyluvs2cook! I also wondered about the cheese. It was very expensive and I don't think I will buy it again just to find out. lol!
