    Simple Italian Grilled Chicken
    Recipe made for IMI2 group's May 2020 'picture-less' recipe challenge.

    My review: I like the simple combination of ingredients, ideal for my taste, and too gives me plenty of serving options (as is, sliced over salad, with varying toppings, on top of pasta). I find the recipe better when the chicken breast is pounded thin (no more than 3/4" thick). I did not microwave the mixture, I don't understand why you would and then just dip the chicken to coat. I did however mix the ingredients and smear all over the pounded thin BLSL breast and allow to marinate in the fridge for about an hour before grilling.

    I quite often bloom my dried herbs in hot oil. I do it in the microwave for my Greek marinated chicken, except I do not add the lemon juice to it as I prefer the fresh taste of the lemon juice. And I also add the fresh garlic afterwards as it comes out from the microwave like roasted garlic and I like that punch of fresh garlic in my Greek marinade.
    Most dried herbs and spices are oil soluble, some are water soluble, but if your not using water in the recipe than blooming them in hot oil really brings out their flavor! :)
