    Slow Cooker Asian Inspired Chicken Stew

    I wasn't sure if I should rate it or not since I didn't use an integral part of the recipe, mushrooms! I'm not a fan of mushrooms (it's a texture thing). But the flavors looked so good I really had to try it. All I had in the crisper drawer were carrots and celery, so I used that instead. I did add the bell pepper called for but used a trio of colours.
    I didn't see the need to cook the chicken breast pieces beforehand, so I just put them in the slow cooker and sautéed all the vegetables, chili flakes and garlic in sesame oil and threw it all in the slow cooker for 4 hours. Next time I'll only add the chicken pieces in the last two hours of cooking to avoid it being overcooked. (newer slow cookers run too hot, even on low!)
    I didn't have cilantro so I topped it with green onions instead. The broth is so flavorful, it reminds me of those ramen noodles that are the original/oriental flavour. (Brought back memories of my College days, lol ;) I could see adding more broth and using udon or soba noodles for a chicken soup! But it was a great stew served over rice!
    I'm sure the flavors would only be better with mushrooms, especially if you're a mushroom fan! But I loved it with the carrots and celery and will probably make it again that way but add some sliced ginger for an extra kick! :D

    Lol, I crave the ramen noodles when I'm sick, that's about the only time I will eat it. But this is a good substitute, and definitely healthier for you! ;)
