    Slow Cooker Barbacoa Shredded Beef by Latinfoodie

    This is tasty! The whole family loved it!
    I've never had Barbacoa before, so I have nothing to compare it to. I have seen recipes for it and many use a ton more spices, some with tomato, some with more peppers. It's probably one of those recipes where families and/or regions have their own way of making it. I chose this one because I had everything on hand and it seemed simple enough.
    I didn't use the jalapeno, but those who like heat added hot sauce to their plate, and some sprinkled chipotle powder over top. I thought about adding some bell pepper instead but chose not to, though I might next time. (Now that I think about it, French's crispy fried jalapeno's or pickled jalapeno's would be awesome on this!)
    My Crock-pot cooked this in 5 hrs on low using a 3lb roast cut in 4 pieces, and I only used 1 cup of water. My 6qt pot had ton's of room around the beef and only filled it about a 1/4 of the depth, therefore making much more steam and condensation. So, I could probably lower the water slightly next time. But if you have a smaller slow-cooker you're probably fine. The water covered about half the beef or a bit more-- and even though the recipe doesn't specify, I turned the meat over about every hour.
    I served it over Mexican style rice with a side of Mexican style corn. And we had leftovers in tortillas with some cheese. As per description, I served it with lemon wedges, which was perfect over the beef. It needs that zing. I wish I had some fresh cilantro, avocado or radishes for a topping. But all I had was partially dried cilantro and scallions, and I really liked it that way anyhow. I could see adding some more spice to this like oregano, cumin or allspice. I may play around with flavorings next time. But it's still great as is! :)

    This looks so good Shona, I'm definitely bookmarking! I have never tried French's crispy fried jalapenos but Sunny Anderson has used them a few time on "The Kitchen" and they look awesome. Ok, putting those on my grocery lists :)

    My son LOVES the crispy jalapenos! He puts them on burgers, tacos, chili, soups, wraps and even sandwiches. Which is why I didn't have any when I made this, lol! ;)

    I would assume so? But I've ordered grocery's online for over two yrs now, so I'm not really sure. Last time I went to a Walmart (which was over a yr ago) they had them in a bag, like croutons, and I believe it was in the same aisle they sold croutons, bacon bits and condiments? My online grocery store has their own store brand of crispy jalapenos and that's what they substitute with if they're are out of French's brand. They could be in the aisle where they sell Mexican food too? Hmmm...Hopefully you come across them soon! :)
