Slow Cooker Collards

    *Made for the November 2020 "Slow Cooker/Dutch Oven Recipe Challenge*

    I halved this recipe and not even sure I would have been able to get all the collards in my slow cooker (and it's a big one) if I had made the full recipe without pusging with all my might to press it down :-P I used a chunk of slab bacon and diced it, but I did crisp it up some in a pan before throwing it in. I did not add the salt considering there is already chicken stock and bacon in this and it was perfectly seasoned! So good, so tender and has a nice kick :)

    I couldn't even imagine what 2 lbs of collards looks like! Good call to half the recipe. I have a 6 qt crock-pot, I think most range from 4-8qts? Keni must have had an 8qt! ;)
    It looks great Michelle! I love the sound of the bacon in this, and with the chili etc. it sounds super flavorful! :)
