Spanish Roasted Potatoes With Poached Eggs

*Made for the 2018 Egg Recipe Challenge*

I finally got poached eggs down!!! I followed a different method this time. I filled a pot with about and inch and a half of water with 2 Tbs. of vinegar and brought to a low simmer. Dropped eggs in and cooked for about 3 minutes. Came out perfect, woohoo!! The eggs went perfectly over the Spanish potatoes, which were delicious. A perfect brunch :)
