Ingredients

How to make it

  • Preheat oven to 400.
  • Place potatoes in large mixing bowl then add olive oil, salt, paprika and garlic powder.
  • Toss well until mixture turns a deep mahogany red then place in cast iron pan.
  • Roast 30 minutes then using a metal spatula carefully turn potatoes over.
  • Be sure to scrape the great crust that is forming on the bottom.
  • Return to oven for 30 more minutes or until they are nice and crisp.
  • Remove from oven then place roasted potatoes on plate and top with poached eggs.
  • Sprinkle with chopped Italian parsley and serve.
