Spanish Roasted Potatoes With Poached Eggs

- 4 russet potatoes washed dried and cut into 1” chunks shopping list
- 1/4 cup olive oil shopping list
- 1 teaspoon sea salt shopping list
- 1 teaspoon smoked paprika shopping list
- 1/2 teaspoon garlic powder shopping list
- 4 eggs poached shopping list
- 1 teaspoon chopped Italian parsley shopping list
How to make it
- Preheat oven to 400.
- Place potatoes in large mixing bowl then add olive oil, salt, paprika and garlic powder.
- Toss well until mixture turns a deep mahogany red then place in cast iron pan.
- Roast 30 minutes then using a metal spatula carefully turn potatoes over.
- Be sure to scrape the great crust that is forming on the bottom.
- Return to oven for 30 more minutes or until they are nice and crisp.
- Remove from oven then place roasted potatoes on plate and top with poached eggs.
- Sprinkle with chopped Italian parsley and serve.

I'm single so I will have to halve this recipe, but this will make a good breakfast or brunch. Thanks for the post. Its a 5 all the way.
