Spicy Lo Mein Noodles

    Spicy Lo Mein Noodles
Made for IMI2's February 2019 "Asian or Chocolate" challenge. This recipe was made for the Asian part of it.
My review: Delicious! and I love that it uses basic ingredients. This would be ideal with the optional add ins such as various veggies and/or proteins. I highly recommend using light soy sauce, I only had regular and even watered down a bit was till a bit too salty.

Great photo Linda! I've never seen a Lo Mein recipe with peanut butter before. I like that you can add whatever veggies you want to this! So many call for ingredients I can't find here or don't like, so this is a great starting base. :)

Spicy Noodles would be a better name for the recipe Shona as this really isn't anything like the Lo Mein you'd get at a restaurant. It's great but the name is a little misleading.

Nice photo, LindaLMT! Wondering if this meant to be more like a Thai dish. When I think of Thai, peanut butter and spicy HOT are the first things that come to mind.

Not sure why the peanut butter, you don't taste it. Maybe just to thicken the sauce a little and add some earthiness??

Omg, I love these noodles Linda, and so glad to see them in the IMI II finally! I need to make them again. I dislike peanut butter quite a bit, but with the soy sauce and sesame oil in this recipe, you can't taste it that much, as you said. It's great with some cooked chicken or pork on top :) Beautiful photo!!

Thanks Michelle! I seen you made them too and was thinking the same thing of adding some bean sprouts, veggies, and chicken.

Made them! Thanks Linda for the inspiration! It is quite different from what I would usually make, and you inspired me to switch things up a bit. I will be making them again because hubby quite likes them! Thanks again! ;)

Mr. J. really enjoyed these noodles. I have known him for 30 years, and he never eats the same thing two days in a row (except these noodles - first time I have ever known him to eat leftovers). I usually have to eat leftovers myself, or stash them in the freezer for later. I started to look for some more recipes for lo mein. I picked up some VIRGIN PEANUT OIL from the International Foods Section at the supermarket. It is a darker color than the Planter's (TM) Peanut oil. Oh my goodness! Is it ever "peanuty"! It actually tastes like peanut butter. It makes the Planter's (TM) Peanut Oil seem relatively tasteless. I just thought I would mention it in case anyone likes to experiment with new ingredients....I would suggest Virgin Peanut Oil is a flavorful oil like sesame oil (a small amount is delicious). :)

Glad Mr. J liked them so much Mrs. J!! That's so awesome! :) It is very peanuty for sure. I'm very picky about how I eat peanut butter, which I do not like in sweet dishes but I do tolerate in savory, sometimes, and this is one of my favorites and that I will eat :) Thanks for the review!!
