Spinach Quiche

    Spinach Quiche The Best Ever by MrsWilliams

    This tasted great! I especially loved the feta with the spinach/zucchini filling.
    I opted to sauté all the vegetables before baking, to eliminate any added moisture. Because I did that I left out the 1 T. of flour. I'm glad I did because I had so much filling I couldn't fit it all in the deep-dish pie crust. I ended up scooping some of the spinach and zucchini out to fit all the egg mixture in.
    I had a large container of baby spinach and just added handfuls until it looked like a "half a bag's" worth. So perhaps I added too much? But, I think there would be enough filling to fill two crusts if you added some cooked ham, bacon or extra veggies to it. So I will try it that way next time. (Or make a homemade crust and layer this into a 10 inch tart pan)
    I cooked this at 350F for 40-45mins instead of 325F for 60mins. and it was perfect! (I did prebake the crust for 7minutes at 425F like the recipe says).
    My kids favorite egg dish is a frittata with zucchini, tomato and cheese-- and this reminded me of it so I topped it with grape tomatoes and it was delicious with it! The kids went back for seconds so I wish I did cook two of these! Lol....

    Wow Shona, that is picture perfect for sure! I thought I recognized the name of this recipe, I need to make it again. I honestly can't remember if I had too much filling or not, I didn't mention it, so not sure. Good call adding a meat and making 2 though!!

    Thanks Michelle! I thought I bought the wrong pie shell and doubled checked, but it said "deep dish pie shell" on the box. Perhaps they make them smaller now or each brand has slightly different sizes? I managed to fill it right to the top of the crust and it surprisingly didn't boil over, so it worked out in the end! :)

    Yummy photo Shona!! I love quiche but never make it and I don't know why, I should. Smart to precook the veggies so they don't give off too much water, especially the zucchini.

    Thanks Linda! This recipe is similar to one in a cookbook I have but instead of zucchini it uses mushrooms--which are sautéed before baking--being that zucchini is just as/or more watery then mushrooms it would be a good idea to precook the veg! :)
