Spinach Scrambled Eggs

    This is a great way to start your day, easy and quick.
    I added a bit of red bell pepper, had a bit to use up. Butter was Natrel Lactose Free Butter.
    The cream was Natrel lactose free coffee cream, which to my surprise tasted very good.
    I scaled it down to two servings and used two whole eggs and about 1/4 cup egg whites.
    I find adding egg whites makes for fluffier eggs. I buy the eggs whites that come in a carton.
    We both liked it, but then I do like veggies in my eggs.

    Made for the April Pantry Challenge.

    Beautiful photo Manella! So colourful and scrumptious looking. Good call on adding red pepper to it, I love the combo of red pepper and spinach..yum! That's the same cream I buy too, my DH uses it in his coffee now and he can't tell the difference between that and regular cream! ;)
