Sunshine Chicken Thighs

    Great way to make chicken thighs. The skin was nice and crispy and the chicken tender and flavourful.
    I lifted the skin from the thighs and made some small cuts on the meat, so when I rubbed the chicken the flavor went into the meat. I put the skin back ok and rubbed it also, and then sprayed it with EVOO, and sprinkled paprika on for color.
    I also put the lemon slices under the chicken and did not squeeze the juice on top.
    The lemon flavor came through very nicely.
    I will make this again.

    I noticed that Michelle made this a few years ago so I thought I would try it and it is delicious.

    I like the sound of the spices, and the lemon. Good idea to place lemon slices under the chicken, I like that even better as the underside of the chicken would soak that right up. Yum! :)
