Sweet Balsamic Roasted Vegetables

    Sweet Balsamic Roasted Vegetables by JoJoBa

    Great way to use up root vegetables! I served it with rosemary garlic chicken breasts and Caesar salad. This would make a perfect side dish to any poultry I think.
    I love the rosemary and balsamic together! I made this on an oiled sheet pan instead of the tin-foil pouches. I covered the pan tightly with foil and baked as instructed. The only thing I'd do differently is bake covered for an additional 10 minutes and bake uncovered for 20 minutes instead. The veg needed to be steamed a little longer, other than that it was great.
    I didn't have fresh thyme so I used dried, and cut up large carrots instead of baby carrots. I wasn't sure if the vegetables would crisp up, but the whole tray got a lovely caramelization from the balsamic! I added salt and pepper at the end. And I think goat cheese like JoJo mentions would be nice with it or a sprinkling of parmesan would be great too. :)

    but i think these would go with pork also.. YUM!!!

    Manella, I think pork would be great--good idea! I might just make this with a pork tenderloin at Christmas since I like to make "non-turkey" dinners! ;)

    Beautiful photo, Cosmicmother! They look so good! Wish I liked balsamic vinegar. Used to like it and cooked with it all of the time. Then all of a sudden it didn't taste good to me and haven't been able to eat it since.
