Recipe by Kennadlovely: Sweet Potato Succotash/saved
Don't know what succotash is. Guess I should Google it. It always reminds me of that cartoon character, Sylvester the Cat, that used the phrase "suffering succotash". It put an untoward feeling about eating succotash in my mind even though I did not know what it was.
Nonetheless, this here recipe is a fried potato recipe.
Hmmmmmmmm.............Google says succotash is a corn and Lima bean recipe. Well, no wonder I never liked Lima beans during my formative years.
I like fried potatoes so there's nothing wrong with this recipe. I usually make fried potatoes with a lot of butter but stuck faithfully to the recipe on this one.
Twenty minutes to fry to the tenderness of my liking.

Made this recipe because I had some left-over kale and green beans to use up. Cut up both type potatoes with the skins on.

I don't like traditional succotash, either, Points, but this looks super yummy! Nice call leaving the skins on the potatoes.

I never really knew what a succotash was either. Looks really good though, a nice side dish or even just eaten on it's own!
