Tibetan Cauliflower Curry

    *Made for the January 2020 "beans and Legumes" Recipe Challenge*

    I was craving curry and I really like the cauliflower curry at our local Indian food place, so I typed cauliflower, curry and coconut milk into the ingredient search and this popped up! I made a few changes. No carrots in the house surprisingly but I had some spinach that needed to be used so I threw that in. I started with less water and kept adding it as needed just so I didn't end up with a soupy mess. I halved the recipe but didn't use as many peas as called for, seemed like a lot! So flavorful and it really hit the spot!!

    Thanks Shona! I ate the leftovers today for lunch, just as good if not better :). Forgot to mention I made this yesterday!
