Tomato, Cucumber and Basil Salad

    From Frankieanne: Tomato, Cucumber And Basil Salad

    I made this for the August 2017 recipe challenge and will definitely make it again! I think you can use dried basil in this, but the fresh really makes the flavor pop! Plus, it just looks pretty in the salad. The balsamic vinegar I buy is, in the words of the saleswoman, "sweet enough to drink", so I will omit the sugar next time, as well as the olive oil. In fact, I'm making it again tonight - yum!

    The last bottle of Balsamic vinegar I bought was really sweet too, I had to adjust the sugar in my marinade. I bet it would be great on this without the sugar as well! Thanks for bringing the recipe to our attention :)

    Even those touted as being sweet aren't sweet to me, but I love this one!

    Manella, being lactose-intolerant, my husband liked that he could eat what is basically a caprese salad without worrying about any dairy, so I hope it works for you, too.

    Cheryl, I'd never even heard of them, but my local stores don't have them. Maybe they're regional?? They sound good, like maybe regular cucumbers with a hint of lemon flavor.

    Linda, maybe you'll have to experiment to see if you can duplicate your dad's recipe. I had a former neighbor like that and it was soooo hard getting a recipe out of her "just a little of this, a little of that, and mix until it 'looks right'". I am not a good seat of my pants cook and need specific amounts and instructions :p
