How to make it

  • Mix the balsamic vinegar, olive oil and sugar together and put in the refrigerator to chill for about 30 minutes or so. Mine ended up chilling for about an hour.
  • Slice the tomatoes and cut the cucumber into bite sized pieces. Add the basil and pour the dressing on. Toss and serve.
  • I like the chilled dressing on top of the still-warm-from-the-garden ingredients. I think next time I will put some red onion in this.

    Recognizing the ingredients as those of a traditional caprese salad, I knew we'd like this refreshing salad and it didn't disappoint. The only thing missing is the mozzarella cheese, which works out well with the lactose issues in our house. I halved the recipe using two roma tomatoes and one small regular cucumber (I couldn't find a lemon one anywhere locally). The balsamic vinegar I buy is sweet enough on its own that next time I'll omit the sugar, but, if the balsamic vinegar you use has more bite to it, I would definitely suggest adding it. I'll also omit the olive oil, as the sauce didin't seem to need it, and drizzle just enough balsamic vinegar over the vegetables to taste. Thanks for sharing your recipe, Frankieanne!     I've seen the plants for lemon cucumber but never got them when I was planting. I don't see them in stores but I'm saving this for next year when I plant cucumbers again! I'm giving into my curiosity! Looks so good Frankie!
