Tomato Basil Feta Olive Salad

    *Made for the March 2020 "Spring" Recipe Challenge*

    Shona making Janet's recipe got me craving Feta :P The recipe submitter doesn't really give suggestions on what to serve this with or on. I served it this time just over some arugula since I wasn't super hungry. I could see it going well on toast, grilled chicken, it in some sort of a wrap! I do think it needs some acid, I gave a good squeeze of lemon after tasting a few bites and it definitely gave it what it was missing for me. This satisfied my craving!!

    Great photo Michelle! It looks so light and refreshing. Oooh, I could see that in a wrap too or a pita pocket, like the salad they put in a falafel or Mediterranean pita wrap. Good call on the lemon juice, sounds perfect! :)
