Tomato Zucchini Soup

    Made for the Recipe Challenge November 2016: Soup!

    I had a lot of zucchini to use up, so why not use it for the soup challenge?! This was a great, homey and surprisingly hearty soup! When it was time to blend I removed half of zucchini/onoins with a slotted spoon then pureed with my stick blender, then added it back in. Topped with some grated parmesan. I have some leftovers for tomorrow, which I know will taste even better :) A dash of red pepper flakes wouldn't hurt though, that's just me though!

    I did like the touch of lemon juice Bakerme, but yes it can definitely be omitted, the canned tomatoes give off enough acidity on their own to compensate :) I tried it before, then after the lemon, both were good but I just really liked the flavor it gave, freshness I guess!

    I need to cut acid in my diet, so would probably add a touch of sugar like I do for spaghetti sauce and chili.
