Turkey Oodles of Noodles Soup

    *Made for the December 2020 "holiday/festive" Recipe Challenge*

    A very delicious and simple soup! Such a good way to use up some Thanksgiving leftover turkey I pulled out of the freezer, and warmed us up on this cold Christmas Eve night :) I cooked my noodles separate and added the soup on top when serving. I did forget the peas :( I feel like that's an ongoing situation for me lol. Highly recommend!!

    Manella, I just recentlt figured that trick out lol. I don't make a whole lot of soups with noodles, but when I do, they sure do suck up that broth and become mushy! I think I first saw the cooking separate method here at some point!

    It's delicious and comforting, and so easy to put together. I only had half the amount of turkey leftovers, so I halved the recipe, except left the celery and garlic amounts the same. I also used vegetable broth like the recipe submitter does and it was great. I had to sub the leek for an onion, and sub ditalini pasta for the egg noodles/spaghetti. I weighed the ditalini to get 3oz for a half recipe which was just under half a cup; that was a perfect ratio of pasta for us. A great use of turkey leftovers! :)
