    Made for December's 2017 Quick Bread Challenge

    Zig Zag Molasses Loaf Cake by Midgelet

    A wonderful loaf! So much better than I imagined. I baked the loaf the night before so the molasses flavour could mellow out. The spices in the molasses swirl were spot on! It permeates through out the loaf, and the molasses keeps it moist.
    I love old recipes like this! I actually found the original ad this recipe came from on the net and it was topped with a chocolate frosting dotted with pecans. I bet that would go great! Or even a light glaze would go well too. The top of the loaf gets rather dark from the molasses, so it's nice to cover it up with something. I did have a little of the spiced molasses leftover, and I wish I kept it because it would have been nice to drizzle over a slice! And speaking of pecans, I bet that would go great inside the loaf and I'll try that next time! :)
    I baked it for 45 minutes, and I would check on it earlier as mine was just a little dry around the edges, so perhaps 40 minutes would have done it. This was perfect with a cup of coffee, but it would make a great dessert too!

    Gorgeous photo, Cosmicmom! I'm not a molasses fan if it's a strong flavor, but the 1/4 C. called for in this doesn't look overwhelming.

    That is so beautiful Shona! Good idea to shake some powdered sugar on it to cover the top. We love lightly flavored molasses desserts (or breakfasts:), so this would be perfect, bookmarking!!

    It did smell good while baking! I am having a slice right now for breakfast with a bailey's and coffee. It tastes even better the 3rd day! :)
