Zucchini Rice Pie

  *Made for the October 2020 "Cucurbit" Recipe Challenge*
  
  I was wanting to incorporate rice with zucchini for a side dish to our dinner and found this! It turned out so good! There is not salt listed in the ingredients but I suggest adding some or make sure you salt your rice well when cooking it. Came out in nice slices, topped with some green onions for color :)

  Great photo Michelle! And awesome recipe find! I could also see making this a main dish with a side salad. My family loves rice so i know they would love this, minus the mushrooms for me though ;)

  Thanks ladies :). You could easily leave the mushrooms out Shona and even replace with another veggie, shredded or diced carrots would be an awesome addition!
