Zucchini Rice pie

- 1 large onion, finely chopped shopping list
- 1 cup of sliced fresh mushrooms shopping list
- 1 medium zucchini, scrubbed chopped about one cup shopping list
- 1/2 tsp of dried basil shopping list
- 1/2 tsp of dried oregano shopping list
- 2 tbsp of butter shopping list
- 1 1/2 cups of cooked cooled rice shopping list
- 5 eggs shopping list
- 1/3 cup of milk shopping list
- 1/3 cup of grated parmesan cheese shopping list
How to make it
- In a skillet cook onion, mushrooms, zucchini, basil and oregano in butter until the veggies are tender but not brown.
- Stir in rice eggs, milk and 2 tbsp of cheese.
- Turn into a well-greased 9 inch pie pan.
- Sprinkle with remaining cheese.
- Bake uncovered in 350 degree oven for 25 minutes.
- Let stand for 10 minutes.
- Great with a fresh tomato salsa topping, too.
