Ingredients

How to make it

  • In a skillet cook onion, mushrooms, zucchini, basil and oregano in butter until the veggies are tender but not brown.
  • Stir in rice eggs, milk and 2 tbsp of cheese.
  • Turn into a well-greased 9 inch pie pan.
  • Sprinkle with remaining cheese.
  • Bake uncovered in 350 degree oven for 25 minutes.
  • Let stand for 10 minutes.
  • Great with a fresh tomato salsa topping, too.
