    The simple name "Cabbage Soup" doesn't really do this soup justice...with ground beef added it tastes so very close to Stuffed Cabbage Rolls plus it is Sooo much easier. It's delish!

    I sauteed all of the veggies together first to help caramelize them slightly before adding the liquid. I used fresh onion instead of dried, and I added a bit of balsamic vinegar in addition to the brown sugar to add a touch of sweet/sour taste. Skip the water and I think it would be super served over rice...

    I'm listing the proportions I used just so I can make this again with the same results:
    8 cups shredded cabbage
    1 medium onion, chopped
    2 ribs celery, diced
    1/2 red bell pepper, chopped
    1/2 tsp minced garlic
    2 (heaping) tsps brown sugar
    1 tsp balsamic vinegar
    1 lb cooked ground beef, drained well
    1 can (14.5 oz) Italian Stewed Tomatoes, undrained
    12 oz tomato juice
    1/4 cup lemon juice
    2 cups water
    1 tsp beef broth concentrate
    salt & pepper to taste

    Just what kind of "cold" are we talking about out there in CA?

    And lI'll have you know that its going to be very cold this morning. Only 53 degrees. Then it will warm up to 90. Whew. I thought I was gonna have to break out the snow suits : )
