    Spinach And Rice Greek Or Italian

    I didn't rate it, cus I changed it a bit... we don't eat white rice, but when I went to convert it to brown, I noticed that the liquid:rice ratio called for seemed like plenty, even though you usually use more liquid with brown rice... so, I left that alone, and it was still plenty of liquid. Seems like it would be more "soupy" using white and that much liquid, but that's ONLY in my head... :) Also, we thought it a lil bland without some salt in the end, and I would combat that by using stock instead of water, next time. I also made a double batch, but didn't double the spinach, of which there was still plenty, and it was tasty with the rice and tomato and herbs... nor did I double the water, as I said earlier.

    To make it, again, I'd use stock instead of water, half the amount of spinach called for, and add the spinach a lil later... THAT is purely personal taste.... as I said, I used brown rice, which takes much longer to cook, so by the time it was done, the spinach was plenty done, for our taste.... totally not the fault of the recipe, though. :)
