Little Chile Rellano Casseroles

    I used Cheddar as I was out of Jack and served it with a tortilla. I concentrated to see if using the egg whites rather than the whole eggs made a difference. Yes, it did; was lighter / fluffier helping it to rise making a nice presentation. Turned one out onto a plate to see how that worked but was better left in the ramekin. As for tasting like a rellano in casserole form, it didn’t pass. These tasted more like an omelet with chiles, onion, corn and cheese. They would have needed more chiles to bring it closer, as that is the focal point of rellanos, not eggs. The corn was a nice addition and a dollop of sour cream or plain yogurt would be good on top. Was good but think I’ll look for another recipe next time (but may still put it in ramekins).
