  Fixed Mock Manicotti
  this weekend. It's an interesting change from a traditional manicotti filling. My youngest does not have a fondness for ricotta cheese (which is what I always use for manicotti, lasagna, etc.) but he enjoys cottage cheese, so this was a hit with him. I wilted down a bag of fresh baby spinach in a saute pan on the stove, rather than use frozen spinach and put all of the filling ingredients into my Cuisinart to get the spinach chopped up and to adjust the texture of cottage cheese, which I don't care for. Really great recipe - it's a keeper.
