Spicy Peach Chutney

    Spicy, sweet, with little to no heat.
    It's good for a spread.
    Made 9 half-pints. Only took an hour fifteen to cook down.
    Put a candy thermometer in the pot to monitor the temp just for farts and giggles.
    Usually as a syrup solution boils off the water content the temperature will increase.
    Towards the end of the cook time as the solution was starting to get thick, the temp actually started decreasing. Interesting.

    As regards the Spicy Peach Chutney, The first time I made it I made just a small amount I think I used 1 or 2 peach(s) and cut everything down. It worked out great.
